A cookery class with Nathan Outlaw – thanks to Davidstow Cheddar
As you may remember from my review of the Boscastle Festival, Nathan Outlaw is one of my favourite Cornish chefs. So winning a place on the Davidstow Cheddar cookery course, led by Nathan was a real treat. And, I knew just who to ask along! My friend Kay, apart from having strong Cornish roots, is a real fan and not only visits his restaurant in Rock, but is a regular at the Food Festival. We both know and love Davidstow Cheese from the Boscastle Festival too.
We met downstairs at ‘L’Atelier des Chefs. Fresh coffee and orange juice before we got started making a cheese and chive mayonnaise to accompany some crudités. Now, I’ve just learnt how to make a cheat mayonnaise with a stick blender – so the idea of whisking egg yolks to death was a bit daunting. Luckily though, we got some help!
The effect of adding grated cheddar and chives to the mayonnaise was to instantly lift it. Home made mayo is lovely stuff, but this made a dip that tasted rather more special than the time it took to make! Of course as with most ‘simple’ cookery, it’s all about using good quality, well flavoured ingredients – so very fresh eggs, good cheddar and fresh chives are essential.
After more coffee we watched Nathan demonstrate how to pick a crab.
Now, I think we were quite lucky not to be asked to replicate. And even luckier in our case to share the bowl of fresh crab meat when we made our Spanish style omelette. The basis for this recipe was to pre-cook the onions and potato so that they were softened, then allow them to cool just a bit before adding to a mixture of beaten eggs, crab meat, chives, Davidstow Cheddar and seasoning. The mixture was then cooked on the stove top , drawing the edges in to make a cake-like omelette, then allowing everything to set and the bottom to crisp up.
In fact we added so much crab to ours (probably about twice the recommended amount) that we had to finish it off in the oven!
The end result was fabulous though – perfect simple food for a summer lunch.
