A Masterclass, Recipe and Tips at the Jumeirah Lowndes

With a faltering attempt at Spring this week and a cloudless blue sky this afternoon, this particular post seems almost relevant.  On the afternoon of the planned barbeque demonstration at the Jumeirah Lowndes Hotel however, a thunderstorm, hail and fierce winds had me calling the organisers at 3pm.  ‘Don’t worry – the forecast is for sunshine at 5pm’ announced the chirpy PR.  Now, I know PRs are generally happy, smiley people, but this just sounded unrealistic.  I spluttered something inane back. put the phone down and looked disbelievingly out of the window.  I have to admit feeling just a little bit grumpy at the idea of grilling in the rain.

Unbelievably as I left the house, on the stroke of 5pm, the sun did indeed come out.  In any case, The Terrace at Jumeirah Lowndes is covered with large parasols and fully heated.  Just round the corner from Harrods and Harvey Nichols, it  is a large secluded private space at the back of the Hotel,  fitted out with serious ‘Grilling’ equipment, comfy chairs and tables and the very necessary parasols and heaters.  One to remember for sunny afternoons and balmy evenings, I can see myself happily sitting out at The Terrace sipping fizz on a regular basis, if we get any Summer this year;)

We were there to have a barbeque lesson and demo from Head Chef Martin Gabler, runner-up at the British BBQ Championships 2012.  It struck me that quite a lot of what we were shown was actually healthy – worthy of a 5:2 diet fast day – although NOT if you wash it down with copious quantities of fizz.

Perhaps my favourite dish was the Thai Marinated Tiger Prawns, so I’m sharing Martin’s recipe with you here for the ultimate ‘have fun on a diet’ dish!

Thai Marinated Tiger Prawns

Serves 1
Prep time 15 minutes
Cook time 6 minutes
Total time 21 minutes

Ingredients

  • 3 Headless Tiger Prawns (Deveined and butterflied)
  • 1 Medium Chilli
  • 5g Chopped Coriander
  • 2kg Chopped Garlic
  • 10ml Olive Oil
  • 1 splash Lemon Juice

Directions

Step 1 Mix the chilli, coriander, garlic and oil together
Step 2 Drizzle the dressing on the prawns
Step 3 season with salt and pepper
Step 4 Leave for 10-15 minutes to infuse
Step 5 Grill on both sides for around 3-4 minutes - basting with a little lemon juice as you grill
Step 6 Serve with piri piri sauce or lemon butter sauce (or just more fresh lemon!)

In addition to the prawns we sampled grilled mushroom and goats cheese salad, yoghurt lemon marinaded chicken and burgers.

Perhaps with the exception of the burgers, everything was super healthy – for example the yoghurt marinade for the chicken was just lemon, low fat yoghurt and green peppercorns with some salt and pepper.  We did spoil any idea of healthy dining though with chips, plenty of wine and a naughty chocolate fondant dessert to round off the evening.  But why not?  The sun had managed to shine for at least an hour and that in itself was cause for celebration.

  2. Cooking classes can be fun! Now you’ve gone and made me hungry after a bowl of Cheerios for breakfast. Those humongous chips remind me of some from a local French cafe.
