Cake Tins That Work even if you #CANTBAKE:
I am really not a baker. I manage to cook tolerable meals and I rather like adapting and inventing recipes. But, the art of baking seems to have passed me by. There are certain things that after more than twenty years I am now quite confident baking. Scones, muffins and brownies all work. Or work well enough for ME to enjoy the fruits of my labours (these chocolate, rum and roast banana muffins are a real favourite now) And, in the case of both muffins and brownies it is at least partly down to using excellent non-stick baking tins. I’m FAR too lazy to make paper liners for a brownie tin. And far too frugal to want to buy paper liners for muffins when I can use a tin that doesn’t need them!
Now, I don’t generally make ‘full sized’ cakes, but I know that is simply because the combination of following the 5:2 diet and not having children to bake for means I’d never be able to eat the result of my baking if I did (I freeze brownies, muffins and scones in convenient one or two person packs and then zap them in the microwave to defrost them and serve them ‘Oven Warm’).
