A few weeks ago I went along to Rabot 1745 to review the chocolate dining experience. Initial skepticism turned into complete enthusiasm for the food. I’d anticipated something a bit heavy and perhaps sickly sweet. The dishes on the menu turned out to be delicious, using cacao more as a spice or flavour enhancer than as a dominant ingredient. Except, of course, in the case of the desserts – but who wouldn’t want to indulge in a delicious chocolate fondant or my choice of the official BAFTA dessert of salted caramel cremeaux , 72% chocolate mousse and Brittany shortbread.
While I know I’d love to go back to Rabot 1745, I’m also hoping to include some of the ideas from the menu into my own cooking. What better way than using ingredients like cocoa pesto which Hotel Chocolat describe as ‘delicious rough-chopped basil, crunchy pine nuts, Italian cheese and nutty roast cocoa nibs. A chef’s favourite – perfect for dipping and cooking’. Or the salted caramel and pecan chocolate spread (actually I suspect I’d be tempted to just eat that straight from the jar).
