Adrian’s Recipe For Coconut Fish Curry February 14, 2016 by Adrian York Adrian’s Recipe For Coconut Fish Curry Print recipe Print with main photo Print text only Serves 4 Prep time 10 minutes Cook time 15 minutes Total time 25 minutes Ingredients 1 onion (chopped) 1 red pepper (deseeded and cubed) 200ml coconut milk 1 tomato (chopped) 1 heaped tablespoon curry paste 1/2 lemon (juiced) 600g white fish (coley, pollock) (cubed) Salt and pepper 1 Pyrex dish 22cm Directions Step 1 Sweat the chopped onion and red pepper in the dish, covered, for 4-5 minutes on High Microwave. Step 2 Add coconut milk, tomato, curry paste and lemon juice. Step 3 Cook on on High Microwave for 3 minutes. Step 4 Add cubed fish and then cover. Step 5 Cook on on High Microwave for 6-7 minutes stirring halfway through cooking. Step 6 Season to taste.
