Italian Panettone from Seggiano
What kind of Christmas cake do you like best? After all the food for a traditional Christmas lunch, I can’t usually face traditional British fruited Christmas cake, but Panettone, a sweet bread that originated from Milan has a distinctive fluffy texture that comes from a long process that involves curing the dough, a process similar to making sourdough, then lacing it with candied orange, lemon and raisins. Today there are a whole range of variations including chocolate and limoncello. It’s a cake that works just as well as a dessert, served with mascarpone or zabaione.
Seggiano is both a small town in Tuscany and the name of a specialist food producer with a focus on sustainable agriculture and premium Italian products. Originally small-batch olive oil producers, David and Peri, the founders of Seggiano have built their business by finding specialist producers from different parts of Italy, true Italian artisanal food! Their panettone is exactly the kind of cake I want to find under the Christmas tree – the perfect seasonal treat!
