I want to win a week in a Tuscany villa, so I have been experimenting with recipes from Tuscany. My first attempt was the Livorno Fish Stew, which I am not submitting for the competition because it doesn’t include parmesan. I am rather pleased with my second attempt. I’ve eaten the fruits of my labour for supper tonight and it was VERY good! I’ve been to Italy, but never to Tuscany so I do hope you will vote for me!

Essentially this is a broadbean puree more commonly used on Bruschetta and home made oven dried tomatoes with a little pancetta served in a basket made with fresh grated parmesan cheese. Most of it can be made in advance, then just ‘constructed’ when you are ready to eat. You could use the little baskets to hold other antipasti ingredients or perhaps make smaller versions as finger food for parties.
