Smoked Cheese And Bacon Omelette – a simple but delicious supper idea:
I’ve been sent samples of some delicious Applewood Spreadable Smoked Cheese to try – enough to create a few interesting recipe ideas that I hoped would be both healthy and tasty and of course suitable for an an active teenager. Having to feed my 15 year old as well as myself makes some things easier – I can cook enough for two portions, and if I cook it well then she usually takes the bigger plate which helps save my waistline a bit. While I’m not really a cordon bleu cook, I do enjoy messing around in the kitchen and making interesting things for us to eat!
We both like omelettes, so I thought I would try a mix of the smoked cheese and bacon. High in calcium and protein – it promised to taste good too.
The ability to really whisk the Applewood Spreadable cheese into the egg mix gives a fluffyness to the cooked omelette, but does not add any of the normal cheese ‘stringyness’, making it easy to cut and not too messy to eat.
The choice of pancetta or bacon is really down to how much of a smoked bacon taste you want; for me the pancetta version of the above was very delicate and needed something extra to bring out the full flavours.
Verdict from my daughter: big fluffy mouthfuls, nicely filling, but could I add some red-peppers next time to add a bit more colour. Hmmmm… no pleasing some people.
