Easy Easter Brownies #ICakeYou

Easy Easter Chocolate Brownies:

Unexpected Easter visitors? You know – that phone call on Good Friday from friends to say they will be coming your way over the weekend.  Or just want to rustle up something quick and seasonal. Keeping a pack of Betty Crocker Fudge Brownies in the cupboard makes it really easy to do a little home baking.  If you are willing to sacrifice those packs of mini eggs you tucked away in the cupboard for a rainy bank holiday afternoon you can easily pimp things up in keeping with Easter with these easy Easter chocolate brownies.

Chocolate Fudge Brownies

I’ve been playing around with chocolate mini eggs and the Fudge Brownie mix.  Although I love brownies I don’t have a really sweet tooth so I tend to add to my packet mix.  Fudge brownies work really well with a spoonful or two of chocolate nut butter added to the mix – it just makes a richer, darker brownie.  I add a tablespoon of pure cocoa and a little baking powder and two eggs rather than one.  My oil of choice for this recipe is hazelnut oil because it complements the nut butter.  AND, if there are no children coming, I replace the water with 5 tablespoons of spiced rum.

Luckily I’ve got friends to share these with – my problem with brownies is that I want to eat them all at once.

Easy Easter Egg Brownies

Easy Easter Egg Brownies

Ingredients

  • 1 packet Betty Crocker Chocolate Fudge Brownie Mix
  • 1 tablespoon Chocolate Hazelnut Butter (Nutella or similar)
  • 1 tablespoon Pure Cocoa Powder
  • 3 tablespoons Hazelnut Oil
  • 2 Medium Eggs
  • 1 packet Chocolate Mini Eggs
  • 1/2 teaspoon Baking Powder

Optional

  • 5 tablespoons Spiced Rum (You could use any spirit or liqueur. Or, make with water.)

Directions

Step 1 Make up the mixture according to the packet directions, adding the nut butter, baking powder and cocoa powder and replacing the water with spiced rum
Step 2 Line a baking tray with silicone paper
Step 3 Spread the mixture into the lined tray, then dot with mini eggs (or half eggs)
Step 4 Bake for 20-25 minutes at 170c
Step 5 Take out of the oven and allow the brownies to cool before cutting into squares and storing in an airtight tin.
Step 6 Serve cold or warm for 20 seconds in a microwave .

In case you were wondering, I actually used two different mini eggs here.  Galaxy Caramel Mini Eggs, split in half with the caramel side up, went into the tray bake before I cooked the mixture.

When I took the tray from the oven, I popped a Galaxy golden egg (to make a yolk) into each egg half.

The result is truly delicious…chocolate overkill maybe – but of the best sort.  What better way to say #ICakeYou with Betty Crocker

    The USA celebrates National Grilled Cheese Sandwich Day on April 12th.   Well, why not?   Regarded as one of the top comfort foods in America, the version we eat today originated in the 1920s when sliced bread and American cheese became easily available.

    Of course, those of you from the USA and those of you wishing to join the celebrations can do so in London!  Head for the glamorous art-deco inspired Colony Grill at the Beaumont Hotel and you’ll find the menu offers a Grilled Cheese sandwich with Dill Pickle, perfect for National Grilled Cheese Sandwich Day.  While you are there, enjoy a cocktail or three - and perhaps a couple of other American classics - we love the Buttermilk Fried Chicken and perhaps Bananas Foster flambeed in dark rum for dessert.
