Coming to Blackheath Soon!
On Blackheath returns on 9th and 10th September, and whilst we’re looking forward to seeing the fabulous Cuban Brothers, Seasick Steve, Travis, and the Libertines, we’re also looking forward to watching and learning from the talented chefs that Tony Rodd has assembled to tantalise and motivate the home cooks amongst the festival goers.
I was sent a recipe to try at home. Written by Dr Saliha Mahmood Ahmed the winner of Masterchef 2017, it contained two of my favourite things, fish and chillis! The recipe uses flavours often found in South Indian cooking and re-interprets them. Most of us are familiar with Kedgeree, but the use of the poha rice and the green chutney takes the dish to another level. I have to admit that I struggled with the poha rice, eventually only finding it online via the Natco website. Once that part was sorted, the dish is simplicity itself and was very quick to prepare. The original suggests using smoked mackerel, but as that’s cooked already I opted to use smoked haddock instead – you can actually use any smoked fish in this dish.
