Celeriac and Cucumber – Raw Soup for Health:
I tend to avoid smoothies. It’s partly that I like my fruit with ‘bite’ and partly that I have a few food allergies and a few dietary guidelines which are specific to hypothyroidism. One of the guidelines for anyone who is hypothyroid is to avoid uncooked or lightly cooked vegetables from the brassica family. Now if I am honest, I can’t always remember what is and what is not a brassica so I tend to play it safe and cook my vegetables.
My new Froothie Optimum 9400 needed testing though and I’ve long had a bit of a whim to make a cucumber soup that I could have chilled as well as hot. I DO enjoy soups and generally make my own simply to control what I’m eating a bit better. This particular soup involves celeriac too, which I’ve used in the past to create a more robust soup without adding too many calories. I wanted to see if I really could heat the soup in what looks to me like a robust blender. And, whether it would deal with celeriac – a chunky root vegetable that I often struggle to chop up properly.
The answer is yes, the Froothie effortlessly blitzed 2 inch chunks of celeriac, half a cucumber and half a leek. Once I added in some hot stock and oatly cream I put the power up and ‘heated’ the soup.
The result was a warm rather than really hot soup (though in fairness it might have got hotter if I’d kept blitzing), with a remarkably fresh taste. I’ve made enough to try the mixture chilled tomorrow and I’m sure it’s a very healthy way to cook as well as producing something that explodes with flavour. My original plan was to make something for a 5:2 fast day but I didn’t have the half fat creme fraiche I meant to use and instead poured in a whole carton of oatly single cream. The result was delicious but since the carton of cream had about 350 calories, I abandoned all hope of fasting and enjoyed the soup instead. Well worth abandoning my fast day – and VERY quick!
- 350 g Celeriac Peeled and cut into 2cm chunks
- 1/2 Medium Cucumber Cut into chunks
- 1/2 Medium Leek Trimmed, cleaned and cut into chunks
- 250 ml Single Cream I used Oatly - a non-dairy cream substitute
- 400 ml Vegetable stock Made using your normal bouillon
- Salt and pepper to taste
- Put the leek, cucumber and celeriac into the Froothie940
- Blitz until everything is chopped. You'll find even the celeriac is pulverised really quickly
- Add the cream and stock and continue to blitz until the mixture heats through
- Taste and adjust seasoning
I have actually being doing a bit of ‘cooking’ recently. Melba toast is something I remember from my childhood but haven’t made for years.
