Sang Keith Flint, as he fired up his BBQ for a quiet Sunday afternoon meal of cooked meats and veg with fellow Prodigy bandmembers Maxim and Liam Howlett as a Sunday comedown and relaxation technique after a Saturday night of playing with whizzed up ravers heads with their delightful big-beat alt-dance melodies.
Being a man, I like to play with fire. It’s a natural thing for men really. A progression from building treehouses, firing flaming arrows from homemade bows over your neighbours’ gardens, burning ants with a magnifying glass etc….
“Certainly Wood” is not just a clever play on words but a company that believes that men need decent, hard wood to properly assert their dominance over the BBQ domain. They supply quality, sustainably sourced, properly seasoned, conditions hardwood for the purposes of cooking and heating. A hardwood is much better than a softwood for almost any kind of burning purpose, it provides more heat over a longer period. And, there is a difference between cooking with charcoal and wood. Wood is a more “whole” process. Charcoal has already been heat-treated for a considerable amount of time, and as such simplifies things, but loses an essential element of BBQing.
Cooking over wood lengthens the process and brings benefits too. The natural smokiness of wood, adds a particular flavour and taste to our cooking that you cannot get with charcoal. Everything also cooks more slowly and evenly, the payoff being that a little more attention is demanded of you…. but remember you’re a MAN! And this is fire and you should shut out all extraneous things like the rest of the world and wimmin and ironing and concentrate on the flames! And Meat… and Beer! I mean, after all, would Keith Flint be talking about macramé or Katie Price’s latest monetary problems??
The ‘Certainly Wood’ box is supplied with both kindling wood and logs, plus a supply of firestarters (geddit?) for easy lighting, together with instructions for proper men to ignore, and a helpful small booklet on recipes, should you wish to branch out from just eating a decent meaty steak or spicy chicken sometime or other.
There are a few provisos with cooking with wood. Firstly you cannot cook quickly and at short notice. Real wood cooking is better suited to a leisurely afternoon of beer drinking and discussion of power tools and car engines than a quick “Let’s get the BBQ on and chat flippantly about nail varnish”. The hot embers need to be added to on a continuing basis to keep the desired level of heat going over a continued period. However, the rewards are delicious food!
We cooked a whole spatchcocked chicken, smothered lovingly in Jerk marinade, and a variety of veg and asparagus and corn on the cob. It took longer…. but it was well worth it. The chicken was moist and totally flavourful, even the corn had picked up the background smokiness.
I guess the difference is like the difference between instant coffee and proper ground coffee? Instant coffee can be very good, but it’s missing something, something that only ground beans coffee can give you?
Aside from cooking, the wood is ideal for outdoor heating in firepits and chimaeras. Being hardwood it lasts much longer and provides an even heat with little spitting and popping.
