Feeney’s Irish Cream Liqueur for Christmas:
In Ireland they make whiskey, not whisky. And, given my Scottish heritage, that always makes me feel slightly uncomfortable. But, in Ireland they also have some of the best dairy produce I’ve ever tried. The Emerald Isle is so named because of the luscious green grass – and it is that grass which produces the high-quality Irish dairy cream used to make Feeney’s.
It’s made in Abbeyliex County Laios where the eponymous Tom Feeney produced Irish Cream Liqueurs for over 25 years. Today it is made by Master Blender John Drennan, but his aim is to maintain that rich, fresh cream taste for which Feeney’s is renowned.
It’s really quite special, with an almost chocolatey nose, a creamy consistency and a beautifully velvety, smooth and creamy drink with notes of chocolate, hazelnuts and spice to complement the warming whiskey.
I’m craving a glass right now and it’s the sort of thing I love drinking neat. But, if you prefer, you could easily use it to make cocktails like this Expresso Martini.
All you need is a shot of espresso, some premium vodka and of course a bottle of Feeney’s.
Using a cocktail shaker, shake 50ml Feeney’s Irish Cream, 25ml Espresso Coffee and 25ml Premium Vodka with ice and strain into a cocktail glass. Garnish with three coffee beans.
