KWV The Mentors wine pairing with Oven-Baked Mushroom Risotto.
As we settle into the monotony of lockdown many of us will be looking towards the summer for the resumption of some kind of normality. Inviting friends over for supper and opening a couple of bottles of wine feels like a distant dream right now. So, to sustain you through these trying times the team at London Unattached is looking forward with some suggestions for what you might like to eat, like our easy to make oven-baked mushroom risotto. And of course, we want to give you some great ideas of what to drink too when this interruption to regular service is over. KWV is one of the leading wine and spirits producers in South Africa. Founded as a winemaking co-operative in 1918 by winemakers from the Western Cape they launched KWV The Mentors range of wines internationally in 2009. The Mentors are produced by winemaker, Izele van Blerk as a range of small-batch wines “which are intended to showcase the absolute best of South African viticulture and which showcase the diverse terroir of the country”. After a recent relaunch and redesign showcasing the 2017 vintage, The Mentors portfolio now comprises nine wines – Perold, Chenin Blanc, Grenache Blanc, Petit Verdot, Grenache Noir, Pinotage, Cabernet Franc, Orchestra and Canvas and we have been sent a bottle each of the red Petit Verdot and white Grenache Noir to review.
The Mentors Grenache Blanc 2017 is the perfect wine to go with food. it has enough acidity to match with a substantial fish dish, maybe salmon or as in our recipe below for Herb-crusted Haddock with a creamy oven-baked Mushroom Risotto. It has a pale straw colour, aromas of brioche and white flowers with citrus lime flavours and an ebullient Chardonnay-esque creaminess.
The Mentors Petit Verdot 2017 is a deliciously dark red with tobacco on the nose and gentle tannins balanced by some full-bodied plum and cherry notes. It makes a great alternative to your standard red with roast meats or a cheese platter. Here’s our recipe for oven-baked Mushroom Risotto with Herb-crusted Haddock: For the oven-baked risotto
An easy oven-baked risotto recipe with Herb crusted haddock for extra protein
- 1 Onion
- 2 garlic cloves
- 1 large punnet closed cap mushrooms
- 1 bunch Flat Leaf Parsley
- 1 Lemon
- 900 ml stock chicken or vegetable, home-made, powder or cube
- 350 g Arborio Rice
- 2 tbsp Noilly Prat vermouth or similar
- Your own salad dressing
- 2 tbsp extra virgin olive oil
- dressed green salad
- Grated Parmesan
- 4 Skinless haddock fillets 150g
- 2 tbsp olive oil
- 3 tbsp Creme Fraiche
- 1 Garlic clove, crushed
- 120 g Breadcrumbs
- 1 Lemon, zest and juice
- 2 handfuls Flat-Leaf Parsley roughly chopped
Pre-heat the oven to 200 degrees C, dice the onion, crush the garlic in a press, quarter the mushrooms, half the lemon and chop the parsley.
Put a large ovenproof saucepan on a high heat, pour in the olive oil and when hot cook the onion until soft, stirring when necessary. Add the mushrooms until browned and then the garlic.
Stir in the rice and the vermouth until it evaporates. Add the stock and stir thoroughly before bringing to the boil. Take off the heat, put a lid on the pan and place in the oven until the rice is cooked (20 minutes approx.).
Make and dress the salad.
Lightly oil a large baking tray, then lay the haddock fillets next to each other. Mix the creme fraiche with the crushed garlic and spread over the fish.
In another bowl mix the breadcrumbs, lemon zest and juice and parsley together. Cover the haddock with the breadcrumbs. Drizzle olive oil over the fish and pit in the oven for 15 mins or until the topping is crunchy.
Serve the risotto placing the fish on top and the salad on the side.
We loved the pairing of The Mentors Grenache Blanc 2017 with our oven-baked mushroom risotto recipe. Adding the herb-crusted haddock makes for a more substantial dish with extra protein, but if you are entertaining vegetarian guests you could easily leave it out.
