This is an authentic and very easy to make greek starter. Be warned though, it is quite calorific!
153g Tarama Paste ((undyed smoked cods roe))
70g Fine white breadcrumbs
75ml Lemon Juice
610ml Vegetable/rapeseed oil
Mix the breadcrumbs with lemon juice and water and soak for at least 45 minutes
Mix in the tarama past and blitz to a rough paste using an electric hand mixer or wand mixer
Pour in the oil, blitzing the mixture continuously till it is all incorporated
Check the consistency and add extra water if necessary.
