1 teaspoon Sunflower oil (you can use any oil with a high burning point (e.g. NOT olive oil). Sesame oil is particularly nice!)
Assemble all the ingredients next to the cooker
Heat the oil in the wok till you can just see a trace of smoke. Turn the head down just a little
Add the garlic, chilli and ginger and stir around in the oil for 30 seconds or so
Add the peppers and broccoli. Cook for 1-2 minutesstiring constantly. Add a splash of water if the mix looks as if it is burning
Add the pak choi, mirin and soy. Cook for a further minute or till the pak choi is wilted and cooked through
Serve sprinkled with sesame seeds
