2 pieces Skinned Salmon (Sushi grade if possible - around 300g in total)
pinch Sea Salt
1/2 juice Lime
1 tablespoon Yuzu Juice
1/4 Red Onion
1 handful Chopped Coriander or Shiso
1/4 teaspoon Wasabi Paste
1/2 Red Chilli (Deseeded and finely chopped)
dash Light Soy Sauce
8 leaves Chives
Dice the Salmon into chunky pieces about 1.5cm cubed
Put all the other ingredients other than the chives into a small bowl and mix well.
Add the salmon Chunks and stir well
Leave for 20 to 30 minutes, till the salmon turns a white colour as it cooks in the citrus juices.
Serve on a chicory or lettuce leaf, garnished with finely chopped chives.
