Try your hand at cooking different cuisines from around the world
Lockdown life has brought out the inner chef in many of us, I have found that with more time at home I turned my hand to a bit of baking and I’ve also been trying out a variety of new meals on the family. But it isn’t always plain sailing, I’m not always brave enough to try something that sounds too complex and some recipes can often involve a long shopping list with all those ingredients that you don’t just happen to have in the store cupboard. So, I have rather enjoyed trying out The Cookaway’s recipe boxes which provide you with everything you need to try a host of new dishes with the help of their expert chefs.
The Cookaway is a family run business that delivers exciting recipe boxes to your door (no subscription required). You can choose from a selection of different cuisines from around the world, each designed, tried and tested by their team of chefs. These include Indian, Italian, Japanese and Spanish, and more recently they have added Pakistani. Each box is full of lovely fresh produce and perfectly measured ingredients ready for you to make a dish of your choice, plus they provide recipe cards with clear, easy to follow instructions.
Each menu includes a satisfying main dish and an accompaniment, with the option of adding a side dish.
Ordering was very straight forward; their website was easy to navigate and they provided good well-organised customer service. The recipe box arrived in the given time slot, suitably packaged with ice bags to keep the food fresh, plus the packaging was all recyclable and the food clearly marked.
I chose a Japanese meal designed by the teacher, writer and chef Reiko Hashimoto. She has created a collection of nutritious and authentic Japanese dishes which are simple and easy to cook. It’s a lovely way to try something different and build your confidence in cooking a new cuisine.
I ordered Teriyaki Salmon with Hijiki Edamame Rice served with a side of Gomaae Green Beans. There was some prep involved but none of it was too technically complex and along with the help of the recipe cards, it proved to be quite straightforward.
My meal from The Cookaway included two good quality salmon fillets. The teriyaki sauce was made from scratch, I have never actually realised before that it was a combination of soy sauce, mirin and sugar. Half of the sauce was used to marinate the salmon and the other half was slowly reduced to produce a fabulous restaurant quality sticky-sweet glaze which was drizzled over the fillets of salmon, which by following the instructions to the second were cooked to perfection.
I had also never had Hijiki Edamame Rice before, it’s a combination of rice, fried tofu, matchstick carrot sticks, Hijiki seaweed, edamame beans and Konbu dashi powder. I was a little uncertain of how all the elements would cook together as a one-pot dish, but it was a great success. The result was a light and super healthy dish with delicious authentic Japanese flavours which worked really well with salmon. It was almost a meal in itself.
We didn’t really need the beans but they were a good addition to the meal and added a nice splash of green. They were briefly cooked, chilled and dressed with a wonderful fresh sesame seed dressing.
All in, a great meal that was healthy, filling and restaurant quality!
The Cookaway provides a great opportunity to explore different cuisines and try out a variety of meals. I certainly wouldn’t normally have all the specialist ingredients that are needed to make these authentic dishes in my cupboard. The Cookaway also offer opportunities for people to cook alongside their expert chefs and learn tricks and tips for creating show-stopping dishes.
Give it a try, I think it makes a fabulous treat for lockdown and beyond.
