Vegetarian sausage and lentil casserole
Looking for tasty sausages and burgers? It’s worth trying Heck who deliver direct to your home, taking the stress out of queuing at the shops and not finding what you are looking for. I was sent a bumper selection the other week and made our family a sausage-fest, including a vegetarian sausage and lentil casserole that pleased everyone in the household!
The delivery arrived promptly at the time advised of by text in advance. An assortment of colourfully packaged sausages and burgers, in a box that was designed with a cool back insert and ice packs to keep them fresh. Everything from Heck can be frozen, ideal for placing a larger order and saving on delivery costs. I froze the burgers and decided to make recipes using the sausages, chorizo, chicken Italia and vegetarian packs. With the entire family at home during the lockdown, there was still plenty of food, though with one vegetarian I needed to offer a suitable option for her. I planned a tapas-style meal with three dishes which turned out to be a real crowd-pleaser.
The vegetarian sausages are suitable for vegans as well as being low in fat and gluten-free and were perfect to feature in a dish for my mostly vegetarian daughter. Lentils go very well with sausages and are also a nutritious option – high in protein fibre and vitamins.

- 2 tbsp olive oil
- 1/2 medium red onion chopped
- 1 clove garlic crushed
- 200 grams chopped mushrooms
- 200 grams Puy lentils dried
- 500 ml vegetable stock
- 1 pack Heck veg with edge sausages
- 1 dash dry white wine
- 2 tbsp fresh coriander roughly chopped

Heat one tbsp of oil in a heavy based pan and fry the onions until soft

Add the mushrooms and crushed garlic and cook for 2 minutes

Add the lentils and stir to combine

Add the vegetable stock and a dash of white wine, cover and simmer for 40 minutes until the lentils are soft and the liquid absorbed

Fry the Heck sausages, chopped into halves, in a frying pan with a tbsp of olive oil

When both the lentils and sausages are cooked stir the sausages into the lentils and season with salt and pepper to taste

Serve in a dish with the coriander as a garnish
The finished dish was delicious and wholesome. The earthy lentils really complemented the veggie sausages perfectly.
We also enjoyed a dish of meatballs in tomato sauce made with the Heck chicken Italia sausages.
Finally, we loved the chorizo style sausages, a new addition to the Heck range, made from 97% pork with paprika flavouring. They would be ideal for a summer BBQ. For the tapas-style meal, the chorizo sausages were sliced and fried with oil and combined with fried shallots and a hearty red wine to make a sauce which complimented the chorizo perfectly. These were very much enjoyed by the non-vegetarian members of the family.
A good glug of Rioja, Castillo de Albai 2015 really brought our tapas meal to life.
