Courgette Salad with Cheese

Raw courgette salad with Västerbottensost Cheese

  • 2 Medium Courgettes
  • 1 bunch Rocket
  • 50 g Västerbottensost Shaved using a flat cheese slice
  • 50 g Flaked Almonds


  • 1 tablespoon Wine vinegar
  • 1/2 tablespoon Balsamic vinegar
  • 3 tablespoons Good Quality Olive Oil
  • Salt and White pepper


  1. Gently toast the almond flakes
  2. Shave the courgettes into long ribbons using a cheese slicer or potato peeler
  3. Mix the leaves and courgettes in a large bowl, then add the cheese
  4. Mix all the dressing ingredients together. I usually do this in a screw top jar, but if you prefer you can whisk. Any surplus dressing will keep in the fridge for a couple of weeks. Taste and adjust seasoning as necessary.
  5. Dress the salad and mix well with your hands
  6. At the last minute mix in the toasted almonds to ensure they stay crispy
