Simple Low Calorie Fish for the 5-2 Diet

Ingredients

  • 2 Small Fillets of Lemon Sole about 150g in weight
  • 8 Cherry Tomatoes
  • 1 handful Dill or soft herb of your choice - chervil chives or lovage would be good
  • 1 handful Parsley or soft herb of your choice
  • 5 shots 1-cal olive oil spray
  • 1/2 Lemon zested and juiced

Instructions

  1. Pre-heat the oven to 180c
  2. Take a large flat piece of baking paper and spray with one cal.
  3. Lay the fish fillets onto the baking paper at one end
  4. Half the cherry tomatoes and scatter round the fish
  5. sprinkle the fish with a little lemon juice, the zest and the herb and season with salt and pepper
  6. Pull up the sides of the paper and crimp to make a 'bag'
  7. Bake in the oven for 10-12 minutes then serve with the vegetable of your choice
