Smoked Salmon and Fennel Pasta

  • 1/2 head Fennel sliced finely
  • 50 g Smoked Salmon cut into pieces
  • 10 g Parmesan grated or shaved
  • 1 tablespoon Olive oil
  • 150 g Pasta
  • 1/2 Lemon zested and juiced


  1. Reserve any fennel leaves for garnish, gently fry the slices in olive oil till they are translucent and softened

  2. Meanwhile, prepare the pasta according to the packet instructions
  3. Drain the pasta and return to the pan
  4. Stir in all the cooked fennel and oil, the lemon juice and zest and the smoked salmon
  5. Warm through gently until the salmon becomes opaque and the mixture is heated through
  6. Serve, garnished with the parmesan and the fennel fronds and seasoned with black pepper
