Three recipes to try this summer with this wonderful colour-changing tequila!

I can’t be the only one who adored blue foods in my childhood. Slushies, cotton candy, bubble gum – these are synonymous with the sun, cinemas, and fun fairs. Blue was the forbidden colour of sweet indulgence, only making an appearance on special days marked by sugar rushes and bright blue tongues. As if to make the transition into adulthood easier, our late teen years and early twenties were characterised by perplexingly ‘blue’ flavoured VKs, litre bottles of WKD, and jugs of the worst cocktail ever created, the Blue Lagoon. If only there was a sophisticated answer to blue alcohol, honouring the colour’s connection to our childhood, without having to sacrifice a fair few teeth…

The Butterfly Canon Blue Tequila

Well, hold on to your bucket hats folks, as the Butterfly Cannon have a delicious blue tequila, that changes colour when mixed. Nothing has ignited my inner child in this way in a long time, and the possibilities are endless.

What gives it its distinctive colour then? Well, like the other tequilas in the Butterfly Cannon range, the Silver and the Rosa, the Blue Tequila is made from 7–8-year-old agave, sustainably grown and harvested by hand. But, unlike the others, the agave is then infused with prickly pear and clementine, which gives it its blue hue and citrusy finish.

And the name? Well, far from being mainstream and attempting to save the bees, the noble cause of this tequila is the magnificent monarch butterfly. As one, the butterflies migrate each year from their home in North America to forests in Mexico, where they winter, returning to North America in summer to create a brand-new generation of monarchs. Unfortunately, due to deforestation in Mexico’s forests, the monarchs are in danger of losing their natural habitat. Butterfly Cannon Tequila seek to change this, since, with every bottle of tequila bought, some of the proceeds will go to the US Monarch Butterfly Fund, to raise awareness for the incredible natural phenomenon, and to help rebuild the butterfly’s natural habitat.

Butterfly Cannon Blue Tequila On The Rocks with A Grapefruit Wedge

I don’t know what is more compelling, the noble cause or the fact it changes colour, one thing is for sure though, The Butterfly Cannon Blue Tequila doesn’t compromise on taste.  Neat, with a tiny squeeze of grapefruit juice, it retains its soft blue hue and is delicious just served over ice. Sweet but with that unforgettable tequila-specific burn at the back of your throat, it finishes with a zesty kick, leaving your mouth feeling refreshed. It’s a really unique tequila, ripe for experimentation, so that is exactly what I’ve done. Below are three takes on the Butterfly Blue Tequila that play with its colour and unique palette.

The Margarita tastes as soft as its colour. Floral, zingy, with a delicate kick, this is everything a margarita should be, suited up in a lilac jacket. You’ll feel practically like a Disney princess sipping at this ne. A salt rim is a necessity here, although if you were feeling really fancy, you could use pink Himalayan salt, to complement the lilac colour.

Course: Cocktail
Servings: 1 Person
Author: Tacita Quinn
Ingredients
  • 50 ml The Butterfly Cannon Blue Tequila
  • 25 ml Triple Sec Liqour
  • 25 ml Fresh Lime Juice
  • Ice
  • Salt
Instructions
  1. Grab your chilled coupe glass and coat the rim in lime juice. Dip in salt until fully coated.

  2. Add the Tequila, Triple Sec and Lime Juice to a cocktail shaker with the ice and shake until you can feel the outside of the shaker become cold.

  3. Double strain into your prepared coupe glass and enjoy!

The Sophisticated Sour:

Sophisticated because of its monochrome appearance, the egg whites tone down the blue of the tequila, and turn it into a silky grey cocktail. Like any tequila sour, the smoothness of the tequila combines with the lime to deliver a perfectly balanced cocktail, topped with an unbeatable foamy finish.

The Sophisticated Sour, Made with Butterfly Cannon Blue Tequila

Ingredients:

  • 50ml The Butterfly Cannon Blue Tequila
  • One egg white (50ml of Aquafaba for a vegan alternative)
  • 25ml of Fresh Lime Juice
  • A lime wheel to garnish
  • Ice

Method:

  1. In a cocktail shaker, combine the tequila, egg white and lime juice. Do a hard dry shake until frothy.
  2. Add Ice and shake until cold.
  3. Double strain into a chilled coupe glass. Garnish with a thin lime wheel and enjoy!

The Butterfly and Campari Spritz:

The Aperol Spritz’s hardcore cousin. Swapping out prosecco for tequila certainly adds a more alcoholic kick to this drink, but the Butterfly Canon’s natural sweetness and citrusy taste works really well with the naturally bitter Campari. If you don’t have grapefruit an orange wedge would work just as well but might get lost in all the stronger flavours. Also, when making the drink, the layering is scarier than it sounds, it just requires a little patience and steady hands.

Ingredients:

  • 50ml Campari
  • Soda Water
  • 25ml The Butterfly Cannon Blue Tequila
  • Grapefruit wedge
  • Ice

Method:

  1. Add ice to a chilled long glass. Pour in the Campari, followed by the soda water, leaving a 50ml gap at the top.
  2. Slide the grapefruit wedge between the ice cubes.
  3. Take your bar spoon and sit it on the top of the liquid and the ice. Carefully pour the tequila on top of the spoon, allowing a layer to form.
  4. Serve with a straw and enjoy!
