Pomegranate Margarita made with Cazcabel Blanco Tequila
With Halloween fast approaching it’s good to have a spooky cocktail up your sleeve, something punchy, and preferably blood red would hit the spot. I have a bit of a weakness for margaritas so I thought it would be the perfect excuse to pop the cork on a bottle of Cazcabel Blanco tequila and pair it up to make the perfect Pomegranate Margarita.

Cazcabel Blanco is a classically styled tequila created in an independent micro-distillery in the town of Arandas, located in the highlands of the Jalisco mountains in Mexico. Evidently, it was named after legendary medicine man Don Cazcabel.
Cazcabel Blanco is rich in earthy roasted agave, with notes of lemon and black pepper and it is remarkably smooth and well balanced.

I thought it would be good to make something with a bit of a kick to it, which was both sweet and sour, but it had to be red for that Halloween vibe
So with that in mind, I decided on a Pomegranate Margarita, combining the fresh juicy flavours of pomegranate juice with a healthy splash of lime, a good measure of Cazcabel Blanco tequila, and some triple sec – delicious!
This margarita isn’t particularly sweet, the lime juice is pretty tangy and cuts through the sweetness of the pomegranate juice. I suggest adding a little simple syrup to balance things out. But if you like it sweeter add more syrup to taste. Simple syrup is a mixture of sugar and water, to make just use a one-to-one ratio of water to sugar and warm the mixture gently until the sugar dissolves completely. You can store any that’s left in the fridge for a month or so.

Pomegranate Margarita made with Cazcabel Blanco Tequila
- 29 ml fresh lime juice
- 58 ml premium silver tequila
- 58 ml pomegranate juice
- 22 ml triple sec
- 22 ml simple syrup (plus more to taste)
- ice
- lime wedges and redcurrants to garnish

Make lime sugar by combining sugar and lime zest together with your fingertips to release the citrus oils. Pour lime sugar onto a small plate and spread it out as wide as your cocktail glass.

Rim your cocktail glass with a lime wedge (or dip in lime juice) and then dip in the sugar.

Fill a cocktail shaker with ice, add lime juice, tequila, pomegranate juice, triple sec, and simple syrup. Shake until cold and strain into your glass. Garnish with a slice of lime and some redcurrants.
Pour, drink and enjoy for a Happy Halloween.
